We are officially parents to only teens and tweens. Through all of the years of early morning wake ups I never thought we would get to the point where Lewis and I would be able to sleep in until we wanted to get up on the weekends. But we have finally arrived! 3 out of 4 of our kids have decided that sleeping in is the best thing ever. So parents who are still dealing with very early morning wake up trade-offs (you get up today and I will do next weekend) the time will come when you will have to wake those kids up!
Since Sunday morning is the only morning the whole family is at home during the week we try to make a special breakfast. It usually turns into brunch though (since they all like to sleep in). This weekend we did waffles since I had some fruit that I wanted to use.
I use a very basic waffle recipe that is easy to make and delicious.
Sunday Morning Waffles
- 1 1/3 cups flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 2 eggs, separated
- 1/2 cup butter, melted
- 1 3/4 cups milk (almond milk works really well)
Directions
- In a large bowl whisk together all of the dry ingredients, you do not want any clumps.
- Separate the eggs, adding the yolks to the dry ingredient mixture, and put the whites in a mixing bowl.
- Beat whites until stiff.
- Add milk and melted butter to dry ingredient mixture and stir together.
- Fold egg whites into mixture.
From here you just measure out the amount that fits into your waffle iron. About a year ago we bought one of the nice waffle irons that you flip over after adding the batter. The waffles come out delicious and filling. Our kids like to top waffles with all kinds of toppings; butter, syrup, fruit, nuts, powdered sugar, peanut butter, Nutella, Biscoff, whip cream – you name it they top a waffle with it.
Oh PS! We have six people in our family and we have to at least double this recipe. With two teenage boys and two tween girls we go through a lot of food. This week I tripled it and had 4 waffles left for the girls to warm up this week for breakfast.
