Some things just go together. Peanut butter and chocolate. Chocolate and almonds. Strawberries and cream. Lemon and blueberries. Yes, lemons and blueberries. Tart and fresh and delicious. I have made this Lemon Blueberry Cake on multiple occasions for get togethers or coffee with friends.

I love to entertain. I always make a big to do for every occasion – even just coffee with friends. We have fun treats, a take away, photo opts, and more. Getting together for a fun couple of hours in the morning on a Wednesday should be just as special as getting together for a weekend barbecue. After the last year (wasn’t 2016 terrible for everyone?) I tend to find reasons to celebrate.

Every time I invite people over for coffee they ask two things. 1. What is the theme? and 2. Are we having Lemon Blueberry Cake? Themes change but if it is between April and August the answer is probably yes to the cake. I only make this cake when there are bright ripe berries for the choosing.

Lemon Blueberry Cake

Some things just go together like blueberries and lemon. Light, fresh, delicious! 

  • 1 white cake mix
  • 3/4 cup water
  • 3 egg whites
  • 3 ounces Lemon Jell-O ((one small package))
  • 1 cup blueberries
  • 2 tbsp oil
  • 8 ounces cream cheese ((room temperature))
  • 1 egg
  • 3 tbsp water
  1. Heat oven to 350º.

  2. Beat cake mix, 3/4 cup water, egg whites and oil in large bowl with mixer until blended.

  3. Add 1/4 cup dry gelatin mix; beat on low speed 1 min., then on medium speed 4 min. Stir in berries; set aside.

  4. Beat cream cheese and whole egg in small bowl with mixer until blended.

  5. Pour half the cake batter into greased and floured fluted tube pan or 10-inch tube pan; cover with layers of cream cheese mixture and remaining cake batter.

  6. Bake 45 to 50 min. or until toothpick inserted near center comes out clean.

  7. Cool cake in pan 10 min. Loosen cake from sides of pan with knife. Invert cake onto wire rack. Gently remove pan; cool cake completely.

  8. Place cake on final spot (cake plate, platter, cutting board). Microwave 3 Tbsp. water on HIGH 30 sec. Add to remaining dry gelatin mix; stir until dissolved. Brush onto cake; let stand until absorbed.

This is the perfect cake to take you from Spring to Summer. Perfect to go with a cup of tea or coffee while you gab with a friend.
