So keeping with my pattern of making Chex snack mix for a weekend treat we went with Almond Joy Chex Mix this past weekend.
I’ve made Valentine’s Crunch Mix and St. Patrick’s Day Crunch Mix and Andes Chocolate Chex Crunch Mix yet I was still searching for the ultimate in flavor combination. I was sitting down with a snack size Almond Joy during our weekly Sunday movie and thought that it would be great if i just had a little crunch and the idea was born. I couldn’t wait to make it so I headed right into the kitchen while the kids finished watching the movie.

Almond Joy Chex Mix
Chocolate, crunch, nuts, and coconut! Perfect combination!
- 8 cups Chex cereal (I used half rice and half corn but you can do any combination)
- 1 cup almond slivers
- 1 cup chocolate chips
- 1 cup shredded coconut
- .75 cup light Karo syrup
- .5 cup sugar
- 1/2 cup butter
- Mix the cereal together in a large mixing bowl.

Melt the butter in a medium saucepan.

Add the Karo syrup and sugar to the melted butter.

Heat together over medium heat until boiling.

Boil for two minutes.

Pour evenly over the cereal and mix well.

Add chocolate chips and almond slivers and mix well.

Add coconut and mix well.

Spread mixture onto a greased cookie sheet.

Allow to cool completely.
If you don’t eat it all in one sitting (yeah, right) place the leftovers in an air tight container for tomorrow.
