What’s your weekend routine? Since Sunday morning is the only morning my whole family is at home during the week we try to make a special brunch. This weekend we did waffles.

We are officially parents to only teenagers. After not getting a full night’s sleep & never sleeping in for 12 years I never thought we would get to the point where we would be able to sleep in until we wanted to get up. And be the first ones awake! All 4 of my kids have decided that sleeping in is the best thing ever. So those of you who are still dealing with very early morning wake up trade-offs (you get up today and I will do next weekend) the time will come when you will have to wake those kids up!

Weekend Brunch Waffles

I use a very basic waffle recipe that is easy to make yet delicious.

  • 1 1/3 cup flour
  • 4 teaspoons baking powder
  • 1/2 teaspoons salt
  • 2 teaspoons sugar
  • 2 eggs (separated )
  • 1/2 cup butter (melted)
  • 1 3/4 cups milk ((cow or almond both work))
  1. In a large bowl whisk together all of the dry ingredients.

  2. Separate the eggs, adding the yolks to the dry ingredient mixture, and put the whites in a mixing bowl.

  3. Beat whites until stiff.

  4. Add milk and melted butter to dry ingredient mixture and stir together.

  5. Add milk and melted butter to dry ingredient mixture and stir together.

  6. Measure out the amount that fits into your waffle iron. Usually between 1/2 – 3/4 cup. (Amount will vary depending upon brand and size of waffle iron.)

  7. Cook waffles until done. Follow your waffle iron directions. 

My kids like to top waffles with all kinds of good things:

  • butter
  • syrup
  • chocolate sauce
  • fruit
  • nuts
  • powdered sugar
  • peanut butter
  • Nutella
  • Biscoff
  • whip cream

You name it they top a waffle with it.

Oh PS! We have six people in our family and we have to at least double this recipe. With 4 teenagers we go through a lot of food. This week I tripled it and had 4 waffles left for the girls to warm up this week for breakfast. You can triple this recipe when you have house guests and make a waffle bar brunch. Your guests will be very happy.
