So my kids have been on a kick – a snack kick. I made Valentine’s Crunch Mix and St. Patrick’s Day Crunch Mix and they still wanted more. Luckily Chex comes in a GIANT box so I had more cereal to play around with. After several attempts to create a new and fun recipe I created what I think is the best flavor of all – Andes Chocolate Chex Crunch Mix. Holy delicious!

Andes Chocolate Chex Crunch Mix
This might be the best Chex crunch mix that I have put together yet!
- 8 cups Chex cereal (I used half Rice and half Corn)
- 2 cups pretzel pieces ((optional))
- .75 cup light Karo syrup
- .5 cup sugar
- half cup butter ((usually 1 stick))
- 3/4 bag Andes baking pieces (You can find these in the baking isle of most grocery stores)
- Mix the cereal together in a large mixing bowl. Add pretzels in as well if wanted.
- Melt the butter in a medium saucepan.

Add the Karo syrup and sugar to the melted butter.

Heat together over medium heat until boiling.

Boil for two minutes.

Pour evenly over the cereal and mix well.

Add Andes pieces and mix well. The Andes will melt and coat the cereal.

Spread mixture onto a greased cookie sheet.

Allow to cool completely.
If you don’t eat it all in one sitting (yeah, right) place the leftovers in an air tight container for tomorrow. These have the perfect amount of chocolate vs mint flavor.
I have been bagging this up into small snack zip locks and taking it to the movies. It is the perfect theater snack!
